CNN journalist Kate Springer traveled throughout Hoi An to find the best banh mi shops and introduce them to readers around the world.
Coming to Hoi An, Kate was fortunate to meet a famous person, Mr. Huynh Huu Phuoc, founder of the tour organizer Eat Hoi An, and he took him to explore many places.
Phi Banh Mi
According to Mr. Phuoc, Hoi An people are not as interested in the old town as tourists.
Ingredients for making cakes are always chosen from the most delicious types of pork belly.
This is a small shop, located on a quiet street owned by chef Do Van Phi.

Madam Khanh – Queen of bread
Ms. Nguyen Thi Loc, also known as Madam Khanh, opened the store in 1975 and spent half her life developing it before passing it on to her daughter.
The cakes here are delicious with lots of fresh herbs and homemade sauce.
According to Mr. Phuoc, since the second generation took over, the store’s menu has added many new dishes that easily attract Western customers, such as vegetarian bread, beef bread, fish, and fried eggs.

Saigon Bread in Hoi An
The founder of this brand is Ms. Ta Thi Nghia, born in Ho Chi Minh City and moved to Hoi An 20 years ago.
The owner uses fatty pork belly instead of char siu, with lots of green chili, homemade mayonnaise made from eggs, oil, and yogurt, creating a traditional Southern flavor.
Even though the shop is just a small stall with plastic chairs along the road, the cakes here always have a `scrumptious` flavor from each small ingredient.
But the most memorable ingredient is the pate.
As its name suggests, the bread here has the typical sweetness of the South, a region influenced by Khmer culture where a lot of palm sugar is eaten.

Phuong Bread
About seven years ago, one of the most talented chefs and culinary experts in the world, Anthony Bourdain, came to the store and said: `This is the best bread in the world.`
Ms. Truong Thi Phuong’s parents opened the bakery about 55 years ago.
Mr. Phuoc admired: `A man gave up a noble job to work in the kitchen. He has such a great love.`

Lanh Bread
A small stall near Nam Quang pagoda, northeast of Hoi An, Lanh bread has been popular with locals for about 30 years.
Banh Mi Lanh is a fairly small stall near Nam Quang pagoda.
Mrs. Lanh’s cake is not too salty or sweet but brings a cool flavor.
